咖啡的一生
1.Planting
Coffee seeds are generally planted in large beds in shaded nurseries. The seedlings will be watered frequently and shaded from bright sunlight until they are hearty enough to be permanently planted. Planting often takes place during the wet season, so that the soil remains moist while the roots become firmly established.
第一步就是种植咖啡种子。种植咖啡的条件很严格。咖啡种子一般需要种植在有遮荫的棚里,经常浇水,并避开阳光照射。种植通常选在潮湿的季节,以保证土壤湿润,使幼苗能够扎根。
2.Harvesting
Five years after planting, and as berries ripen from green to red, the bush is harvest. Most berries are handpicked, but in some places (like Brazil), it’s done by machine.
通常在五年之后,咖啡就会成熟,可以进行采摘。在大部分地区咖啡都是进行人工采摘的,当然也有一些地区(如巴西)使用机器采摘。
3.processing
Once the coffee has been picked, processing must begin as quickly as possible to prevent fruit spoilage. There are two ways of processing: The Dry Methodand the wet method.
咖啡被采摘后就需要进行加工,加工一般分为干加工和湿加工两种方法。在不同地区和条件下,工厂会选择不同方法进行加工。
4.milling
Before being exported, parchment coffee is processed in the following manner: Hulling、Polishing、Grading and Sorting.
咖啡在出口前,需要通过研磨法处理一下,也就是把准备出售的咖啡豆去壳、打量并进行分类。
5.Roasting
Roasting transforms green coffee into the aromatic brown beans that we purchase in our favorite stores or cafés. Chemical reactions inside the bean begin to make it puffy, oily, and tasty.
烘培咖啡豆是加工咖啡的重要一步,通过控制不同的温度、时间等条件,咖啡豆会发生不同的变化,从而形成各种风味的咖啡豆。
6.grinding
The objective of a proper grind is to get the most flavor in a cup of coffee. Beans will be ground into a specific fineness, whether by machine or hand.
研磨咖啡豆也是十分重要的一步,这一步同样决定着咖啡的口味。
7.Brewing
Brewing is the last way to make the perfect cup of coffee. There are many ways to brew coffee. But remember that prepared coffee begins to lose its optimal taste moments after brewing, so taste it as soon as it is done.
最后一步就是煮咖啡啦,煮咖啡也有许多方法,目的同样也是获得不同口味的咖啡。
